sweet Potato & beet Winter Salad

Ingredients:

(Serves 4) 1 box of The Cool Gardener Schnitzels 1/2 cup Quinoa 2 Kumara 2 Beets or 1/2 jar sliced beets Salt and Pepper 4 Cups chopped lettuce 3 tbsp dried cranberries 1/4 cup chopped walnuts

Dressing: 3.5 tbsp apple cider vinegar 2 tbsp pure maple syrup 1/4 cup extra virgin olive oil 1 tbsp dijon mustard 1/2 tsp salt and pepper to taste

Method:

  1. Cook Quinoa as per packet instructions with a little salt until fluffy and set aside to cool.

  2. Bake Cauliflower Schnitzel as per packet’s instructions.

  3. Dice your beets and kumara, mix with a little olive oil, salt and pepper and bake at 180C for 35 - 40 minutes. Or until cooked.

  4. Make your dressing by mixing all dressing ingredients together in a small bowl and setting aside. Adjust the dressing to your taste.

  5. Wash and chop your lettuce in a large salad bowl. Add your roasted vegetables, quinoa, cranberries and walnuts. Pour through your dressing and toss well to ensure everything is coated.

  6. Serve with Cauliflower Schnitzels and enjoy!
