Pumpkin Burger Stack with Lemon & Mustard Aioli

Ingredients

(Serves 4) 4 grain or whole meal burger buns 8 Cool Gardener Pumpkin & Spinach Burgers ¼ red cabbage, finely sliced ½ red and ½ yellow capsicum, sliced into strips handful Baby spinach leaves 1 carrot, peeled and grated 1 lemon, juice and zest ½ cup aioli or vegan mayo 1 tablespoon honey mustard

Method

  1. Make the summer slaw first; in a large bowl combine the sliced cabbage, capsicums, spinach and grated carrot and toss with a splash of olive oil and a squeeze of lemon.

  2. Heat a non-stick pan and use a little oil or spray oil then sear the patties for 3-4 minutes each side until thoroughly heated and golden (alternatively bake in a pre-heated oven for 10-15 minutes)

  3. Combine the aioli, lemon zest and honey mustard.

  4. To serve – layer the toasted or fresh burger buns with a generous swipe of zesty aioli, summer slaw and top with the warm pumpkin patties.
