Creamy Mushroom Orzo Salad

Ingredients

1 box of The Cool Gardener Cauliflower Schnitzels 1/2 cup orzo pasta 2 tsp vegetable stock 2 cups boiling water 1 tsp salt 1/2 tbsp cornstarch 2 tsp nutritional yeast 3/4 cup soy milk 1/2 cup frozen peas 6-8 mushrooms lemon wedges, salt & pepper to serve

Method

  1. Cook the Cauliflower Schnitzel as per package’s instructions.

  2. Add a little extra virgin olive oil to a pan and add your sliced mushrooms with a pinch of salt. Cook for a few minutes until they begin to soften. Add your dry orzo pasta and toast for a few minutes.

  3. Add stock to your boiling water, mix and pour into the pan along with salt. Bring to boil and then reduce to simmer, stirring occasionally until cooked.

  4. Add frozen peas and stir through. Add in your cornstarch, nutritional yeast and soy milk, starting with a quarter cup at a time until your desired thickness.

  5. Stir well and leave to cook lightly for a few more minutes. Serve with Cauliflower Schnitzel, lemon wedges, salt and pepper and enjoy!
